Apple and cinnamon loaf (vegan / gluten-free)

Yes, I feel you. Everywhere you go you get either apple pie, pecan pie or pumpkin pie. Those three are everywhere. The season is not as great in variety as summer, but we can still get creative. That is one reason why I tossed the apple marmalade I had in the fridge inside my bread batter and came out with this simple apple loaf recipe.

Ingredients

  • 2 cups of brown rice flour

  • 1 cup of all purpose gluten-free flour

  • 1 tsp vanilla extract

  • 1 tbsp baking powder

  • 3 cups of nut milk (unsweetened)

  • 1 tbsp of tahini

  • 1 cup of homemade apple marmalade (check the recipe here)

  • Dried fruits

  • Seeds

Instructions

Pre-heat the oven to 200C. In a bowl add all dry ingredients and mix well. Add the milk and stir until the batter is smooth and well blended. Add tahini and the apple marmalade. Mix all well and add the seeds and dried fruits. Transfer the batter to a loaf pan and bake it on pre-heated oven for 45 min. Before removing from the oven use a toothpick to check if the batter is cooked by sticking it in the center of the loaf. If it comes out clear, remove from the oven. Leave for another 10 min if the toothpick comes out with batter in it. Let it cool completely before serving.
