Chickpea waffles

This waffle recipe is a perfect twist on this a classic for a savoury meal. I used chickpea flour as it is higher in protein than regular wheat flour, it is also more flavourful and gluten-free.

Ingredients

  • 1/2 cup of chickpea flour

  • 1 cup of water

  • 1 teaspoon of salt

  • 1 teaspoon of black pepper

  • 1 teaspoon of baking powder

Instructions

In a bowl mix all ingredients, it should be smooth and a bit more runny than a pancake dough. Once well mixed transfer small portions to a warmed waffle maker. Follow the waffle maker instructions to and remove when it is ready.

Suggestion: served with hashed potatoes, avocado and hummus or a refried beans for a complete breakfast.
