Dark chocolate drizzle cookies

I like making this recipe every time I crave something sweet. Sometimes all I want is a warm cup of latte (any latte really) and a cookie, and that makes me feel like I have my own personal coffee shop. It is also good to know that these cookies are made with good ingredients and that I can eat five of them for the price of one from the coffee shop :)

Ingredients

  • 1 cup of shredded coconut

  • 1/2 cup of pumpkin seeds

  • 1/2 sunflower seeds

  • 1 tablespoon tahini

  • 1 tablespoon peanut butter

  • 1/2 cup rolled oats

  • 1/2 cup brown rice flour

  • 1/2 cup of nut milk of your choice (I used unsweetened oat milk)

  • 1 teaspoon baking powder

  • 1/2 bar of dark chocolate

Instructions

Pre-heat the oven to 190C / 370F. In a bowl add all ingredients minus the chocolate. Mix well, the dough should be a bit sticky and heavy. Using a tablespoon transfer spoon sizes of dough to a baking sheet layered with parchment paper. Take the cookies to the over for 10 min. Remove the cookies from the oven once ready and let it cool down. Meanwhile, melt the chocolate - you can melt in the microwave for about 15 seconds then removing it, stir and take back to the microwave for another 15 seconds. Using a teaspoon drizzle the melted chocolate over the cookies and take to the fridge to harden.
