Cucumber gazpacho

This cold soup is one of the bet options for summer. It is super refreshing, hydrating and nutritious.
Gazpacho is a cold soup original from Spain and the original recipe is made with tomatoes. To me, this adaptation is even more refreshing. It is also extra nutritious, as we are using raw ingredients, that will retain most of their nutritional value after preparation.

Ingredients

  • 1 English cucumber

  • 1 avocado

  • 1 can of coconut milk

  • 2 garlic cloves

  • Salt

  • White pepper

  • 1 tablespoon of olive oil

  • A few mint leaves

  • Parsley

  • 2 freshly squeezed likes

  • A handful of chopped onions

Instructions

Blend all the ingredients and let it cool for about 15 min. Garnish with chopped tomatoes and mint leaves.Serve cold .
