Grilled eggplant

Ingredients

  • 1 eggplant sliced in half

  • 1/2 cup of balsamic vinegar

  • 3 garlic cloves sliced

  • 1/2 onion chopped

  • 1 teaspoon black pepper

  • a pinch of salt

  • 1 teaspoon maple syrup

Instructions

Mix all seasoning ingredients in a bowl. Place the sliced eggplant in a deep container. Pour the vinegar mix over the eggplant and let it marinate for at least one hour. Grill the eggplant on medium -high heat for until brown on both sides. Server right away.

You can pair it with roasted veggies, rice or mashed potatoes. It is also a great side for meat dishes (if you eat meat). Top it with fresh tomato sauce for extra flavour.
