Lentil Bolognese
Sometimes all you want is a warm and filling pasta. If you ever feel like you are having one of those days, try this recipe out. It is easy to make and you only need a few simple ingredients. And I guarantee this will take you right back to childhood memories of homemade Bolognese made by mama or grandma :)

Ingredients:
2 cups of raw lentils
5 garlic cloves chopped
1 sweet onion chopped
1 teaspoon of dried cumin
1 teaspoon of smoked paprika
2 teaspoons of dried basil or one cup of fresh basil
1 cup of parsley chopped
black pepper to taste
salt to taste
1 red bell pepper chopped
1 yellow bell pepper chopped
2 tomatos chopped and seeded
2 tablespoons of tomato paste - organic, no citric acid or salt added
1 1/2 cup of vegetable broth - organic, no preservatives added
Optional: feel free to add any other veggies you like. Peas and broccoli are good options.
Instructions:
In a large frying pan add garlic, onion, cumin and paprika. Add a bit of water and let it sizzle and cook for about 2-3 min. When the water starts to dry out, add the lentils, vegetable broth and salt. Stir well and cover. Let it cook for another 5 min at medium heat. Add the vegetables, stir and cover. Cook for another 5 min. Add the tomato paste and stir well so the paste is well mixed. Let it cook for another 5 min and remove from heat. Add the basil, parsley and black pepper. Serve over your favorite pasta. It goes well also with rice or mashed potatoes.
