Vegan and gluten-free banana bread
I am always looking to ways to give my twist to traditional recipes and I believe I nailed it with this spiced banana bread. Don’t freak out it is still soft and sweet, just like banana bread should be :)
This simple bake is so good, not only because it taste delicious, but because it also has lots of nutritional benefits. Bananas are full of dietary fibers and antioxidants. They also are loaded with magnesium, potassium and vitamins B6 and C. They are also low in fat. They help moderate blood sugar levels in healthy individuals if eaten after meals and my reduce appetite by slowing stomach emptying.
Ingredients
3 ripe bananas
1/2 cup of coconut oil (or your favorite cooking oil)
1/2 cup of coconut sugar
2 teaspoons of vanilla extract
1 teaspoon of baking soda
1/2 cup of coconut flour
1 cup all purpose gluten-free flour
1/2 unsweetened shredded coconut (hydrated)
1 tablespoon of pumpkin seeds
1/2 cup of 100% organic dark chocolate
Instructions
Preheat the oven at 180 C. Mash the bananas and start adding the sugar, the oil and vanilla extract. Mix in the baking soda and flour. At last add the seeds, chocolate and coconut. Transfer to a baking pan and bake it for 50 min.
