Vegan chickpea crepes

Sometimes I want some savoury flavour added to my breakfast - or quick dinner. These crepes are exactly that. It is light and flavourful, yet packed with proteins. It is a great replacement for omelettes if you are looking for a vegan dish.

Ingredients

  • 1/2 cup of chickpea flour

  • 1 cup of water

  • 1 pinch of salt

  • 1 pinch of ground black pepper

  • 1 teaspoon of tumeric

Instructions

Add all ingredients to a bowl and whisk until every is well mixed and smooth. It should run lighter than pancake batter but not too runny. Feel free to adjust the water if needed. Heat a small non-sticky frying pan and add the batter - a thin layer, enough to cover the bottom of the pan. Let it cook for about 2-3 min. Add the toppings you like and using a spatula fold the crepe in half. Let it cook for another 2-3 min. Serve right away.
