Roasted red pepper and tomato pasta

This dish screams fancy and tastes amazing, but it is so easy ( and cheap) to make you won’t believe it. It is the best dish to serve when you have friends over and want to impress :)

Ingredients

  • 1 pack of your favorite pasta

  • 2 red bell peppers sliced

  • 4 tomatoes

  • 1 garlic head

  • 1 tablespoon of olive oil

  • 1 cup of organic tomato sauce (100% tomatos, no salt or other seasoning added)

  • salt to taste

  • ground black pepper

  • smoked paprika

  • 1 shallot sliced

Instructions

Pre-heat the oven at 190 C. Slice and seed the bell peppers and tomatos. Add tomatos, bell pepper, garlic and shallot to a baking sheet. Drizzle with olive oil and sprinkle with salt, pepper and paprika. Roast it for 20 min. Remove from the oven and let it cool down a bit. Meanwhile cook the pasta following the instructions in the package. While the pasta is cooking, peel the garlic and add all roasted ingredients to a blender. Blend until smooth. Transfer the mix to a sauce pan, add the tomato sauce and let it cook at medium heat until it starts to boil. Serve it with the pasta. Top it with olives, mushrooms, or other veggies of your choice.
