Vietnamese style vermicelli noodles salad (vegan)

If you ever find yourself wanting something refreshing, easy to make and super nutritious, try this vermicelli salad. You can put this one together in about 30 minutes.

Ingredients

  • thine vermicelli noodles cooked

  • 3 garlic cloves minced

  • 1/2 cup of rice vinegar

  • 1/2 cup of chopped fresh cilantro

  • 1 red onion sliced

  • 1/3 cup of chopped fresh mint

  • stir-fried green beans

  • airβ€”fried tofu wedges - I like to coat mine in peanut butter sauce and then air-fry

  • 2 tablespoons of low sodium tamari sauce

  • 1 sliced cucumber

  • shredded red cabbage

  • sliced red and yellow peppers

  • 1/2 lime

unsalted roasted peanuts

Instructions

In a bowl mix the noodles with tamari sauce and rice vinegar. Top with all the veggies and splash with lime juice. Sprinkle with roasted peanuts and serve.
