1 ingredient buckwheat bread
I have been procrastinating this recipe for ages. The reason is that I tried once and completely failed - all because I forgot to soak my buckwheat grouts. But not this time. This time I made everything right, and the result is well worth it.
To begin, this recipe is easy - it only calls for one ingredient (buckwheat), plus water. But it is worth to say you will need almost 2 days to get it done properly.
Before we jump to the recipe, here are some reasons why this bread is so good for you. Buckwheat, despite of the name, is not a wheat and does not contain gluten. So this one is safe for anyone with gluten sensitivities. It is very low fat, as there are no oils added, low salt and low glycemic index, meaning it won’t cause a huge spike on your blood sugar levels. And, mostly, because you are using the whole grain, it is super high in fibers and minerals. It is also, naturally very tasty!
So let’s jump to it!
Ingredients
350 g of buckwheat groats
600 ml of filtered water
Directions
Rinse and soak the buckwheat. Use a glass container to soak the buckwheat making sure the groats are well soaked (about 2 cm). Cover and leave it overnight in a cool, dry place. In the next morning you will notice that a slimy liquid formed on top of the groats - this is normal.
Drain the groats, but don’t rinse it.
Transfer the groats to a blender or food processor. Add 1/4 of cup of water and blend for about a minute - enough so it is smooth but you can still see some whole groats.
Transfer the paste to the glass container and cover. Let it rest for at least 8 hours, but no longer than 24 hours. It will start ti ferment - you will be able to feel a sour smell coming from it, you will also see that some air bubbles had formed. This is all part of the fermentation process.
After resting, pre-heat the oven to 220 C / 428 F and transfer the dough to a loaf pan - I used a small one (20 x 10 x 6 cm). Do it gently so you won’t blow the bubbles :) Take the dough to the pre-heated oven for 35-40 min. When it is ready take it to a cooling rack and let it cool completely in the pan before serving.
