Socca (chickpea crepes)
This is a great substitution for flour tortillas. I like them with hummus, spreads and as a wrap.

Ingredients
2 cups Chickpea flour
1 cup water, filtered
2 tsp herbes (oregano or parsley)
1/2 tsp sea salt
1 tsp black pepper (freshly ground)
Instructions
Combine chickpea flour and water until crepe-like consistency (watery pancake batter). Adjust as needed.
Add herbs, (any you'd like) and salt + pepper.
Add batter to a non-stick frying pan on med-high heat, and swirl to disperse evenly. Once it gets brown and crispy on one side, flip. Approximately 2 min.
