Socca (chickpea crepes)

This is a great substitution for flour tortillas. I like them with hummus, spreads and as a wrap.

Preparation time: 5 min | total time: 10 min | servings: 4

Ingredients

  • 2 cups Chickpea flour

  • 1 cup water, filtered

  • 2 tsp herbes (oregano or parsley)

  • 1/2 tsp sea salt

  • 1 tsp black pepper (freshly ground)

Instructions

Combine chickpea flour and water until crepe-like consistency (watery pancake batter). Adjust as needed.

  1. Add herbs, (any you'd like) and salt + pepper.

  2. Add batter to a non-stick frying pan on med-high heat, and swirl to disperse evenly. Once it gets brown and crispy on one side, flip. Approximately 2 min.
