Beans and quinoa patties
These patties are crispy and flavourful. Beans and quinoa are also complementary protein sources, which means that when eaten on the same day they will make up for a complete protein source that has all the amino acids one needs in a day. Add this easy protein bomb to your next barbecue, salad or breakfast.
Ingredients
1 can of beans (pinto or black), drained and rinsed
1 cup of cooked quinoa
2 cups of oat flour
1 teaspoon of salt
1/2 cup of fresh parsley, chopped
1 teaspoon black pepper
1 onion chopped
3 garlic cloves chopped
1 table spoon of organic, vegan bbq sauce
1 teaspoon smoked paprika
Instructions
In a frying pan sautee the onion, garlic and beans. When cooked transfer half of the beans to a blender and blend until smooth. Transfer the bean paste to a large bowl and add the other ingredients. Mix all until it forms a paste you can shape with your hands without sticking. Make patties that are the size of the palm of your hands and grill it. It is delicious when barbecued, but will taste amazing if grilled in the toaster oven or grilling pan.
