Dairy-free and gluten-free pancakes
Who doesn’t love pancakes. I love having them on Sunday mornings, it makes breakfast time so special. However I love them I know the traditional recipe isn’t the best option for me. So after trying a few recipes - and failing most of the time - I came up with this dairy-free and also gluten-free recipe that checks all the boxes from fluffiness to deliciousness :)
Ingredients
1 banana
1/2 cup of almond flour
1/2 cup of gluten-free all purpose flour
1 cup of non-dairy milk
1 tablespoon of baking soda
1 tablespoon of a sugar substitute of your choice ( I used maple syrup)
1 teaspoon of vanilla extract
2 eggs ( or an egg substitute such as apple butter or soaked flex seeds for vegan option)
Instructions
Blend all ingredients. With a spoon transfer portions of the dough to a coated and heated frying pan. Fry for about 3 min in one side then flip it and fry for another 2 minutes or until golden brown.
Serve warm with you favorite sides.
