Easy and quick salsa verde
I have to admit that I have never used tomatillos in my cooking before. Last night while grocery shopping I decided to try this new (to me) fruit. It turned out I did not know what to do with them, but found out that I could easily make salsa, so that is what I did. It is one of the easiest things I ever made, and it tested light and fresh. You can top your salads, add to bowls, use as dip for tortilla chips, and, off course, to any Mexican inspired meals you prepare :)
Ingredients
6 medium size tomatillos,
chopped
6 garlic cloves, minced
1 medium size red onion, chopped
1/2 teaspoon ground cumin
1/2 cup chopped cilantro
a squeeze of lime (just a little splash)
a pinch of salt
1
small jalapeno, chopped (add more or less to your taste)
1/2 cup of water
Instructions
Add all ingredients to a blender and pulse it until everything is blended but you can still see chunks of tomatillo and cilantro. Around 20 seconds. The mix should not be completely blended. Transfer it to a bowl and serve.
