Mushrooms on caramelized onions sauce
This recipe got a lot of traction on my Instagram account, but I got so side tracked with the endless chores of motherhood that I could not post this earlier. Anyhow, I am happy to be able to share this with you all now and hopefully you all will enjoy it. This is a hearty, almost meaty dish with lots flavour with a sweet twist.
Ingredients
2 cups of button mushrooms
1/4 cup of balsamic vinegar
2 tablespoons of tamari sauce
1 large size white onion finned sliced
1 medium size red onion finned sliced
1 garlic head chopped
2 tablespoons of tomato paste
black pepper
white pepper
cumin powder
fresh parley
truffle oil (optional)
Instructions
In a large frying pan add the onions and garlic and sauté with a bit of water for 2-3 min. Add the balsamic vinegar, tamari and the spices. Let it cook in medium heat for another 5 minutes stirring occasionally. Add the mushrooms and stir. Add a bit more water and cover. Cook for about 10 min, stirring occasionally so it wont stick to the bottom of the pan. When the mushrooms are fully cooked, increase the heat and let it caramelize a bit - about 2 -3 min at high heat. Add a bit of water and the tomato paste. Stir well to coat. Remove from heat and add chopped parsley. Serve with roastedd veggies, mashed potatoes or rice. Drizzle with truffle oil right to serve.
