Vegan granola bars

That to-go or afternoon snack you need to have. These homemade vegan granola bars are the bomb!

Ingredients

  • 6 pitted dates

  • 1/2 cup of peanut butter

  • 1 tbsp of coconut oil

  • 1 1/2 cups of oats 1/2 cup roasted almonds

  • 1/4 cup cocoa nibs

Instructions

Blend the dates with the peanut butter. Transfer the mix to a saucepan, add the coconut oil and warm the mix at medium heat until melted. In a bowl mix the oats, roasted almonds and cocoa nibs. Pour the peanut butter mix over the dry ingredients, mix all well and then transfer the mix to a baking sheet. Press it tightly. Place the baking sheet in the freezer for 10 min. Remove it from the freezer and cut it into slices. Enjoy!
